Paz Jiménez Carrero began her journey into the world of olive growing in 2006, serving as Youth Representative of the non-profit association Cultolivar, where she worked in administration, taught courses and workshops for children, and managed the association's projects.
Drawn to this world and trained by important and renowned professionals such as Mr. José Alba of the Instituto de la Grasa and Ms. Brígida Jiménez, director of the IFAPA in Cabra, she specialised as an Extra Virgin Olive Oil taster and today she is the owner of La Oleoteca de Sevilla.

TASTING WITHOUT APPOINTMENT
At La Oleoteca there is a space reserved within the shop dedicated to tasting, so that every visitor can take their time and decide which EVOO they like best.
In this “tasting area” you will be attended by professionals and tasting experts who will guide you through the world of Extra Virgin olive oil.
PRIVATE EVOO TASTING
At La Oleoteca you can also book a private tasting space, even for just one person.
In these tastings the clock stops, and they dedicate the time needed to teach, taste and savour whatever the client wishes.
They adapt the tastings to the level of knowledge of the participants and, if necessary, bring the producers themselves to conduct the tasting.
HOME EVOO TASTING
La Oleoteca travels to your home, hotel or favourite restaurant to design a tasting for the moment and day you wish, you just need to ask and book the day.
